Far Out, Man !


Whoa, it's like....HIPPIE FOOD or something, man.

I love brown rice. It's got so much personality. It doesn't lay there like ordinary rice and go "Yeah, so....put stuff on top of me, I don't care". Brown rice says, "Gimme all you got, bitch! I'm still gonna be the star of the show!". It's got a better texture, more body and (duh!) it's much better for you.

Today, I decided to toss a couple of other 'earthy' things into the rice and make a nice, substantial lunch out of it (if you are or ever HAVE been a vegetarian, this IS a substantial dish).

BROWN RICE W/MUSHROOMS & SPINACH

2 cups of brown rice, uncooked
3 1/2 cups of stock (any kind you prefer)
2 tablespoons butter or margarine
10 large mushrooms, sliced any way you please (I used button for this, but feel free to substitute any mushroom)
1 cup chopped, fresh spinach

Bring stock to a boil in a large saucepan. Add rice and butter/margarine. Cook until desired doneness (you may also use instant rice, but follow the directions on the box to cook that).
Transfer rice into large serving bowl or storage container. Add sliced mushrooms and chopped spinach. Blend together and adjust flavors with salt/pepper and any of your favorite herbs (parsley and basil go good in this). ENJOY!

.....And it's OK to wear your Birkenstocks and tye-dye while you're eating it.
