She's A Souper Freak

Well, yeah....I am. But today, it's actually freaky in an edible, delicious form.



WHITE BEAN AND LENTIL SOUP W/SPINACH

1 1/2 C White Beans
1 C lentils (your choice of type)
1 C spinach, chopped
1 small onion, minced
2 cloves garlic, minced
5 C stock (your favorite kind)
Salt & Pepper to taste

Place beans and lentils into large bowl and add water until just covering. Allow to soak for 8 hours or overnight.

Drain liquid and place beans, lentils and spinach into large stockpot or slow-cooker. Add onion and garlic and stock. Cook on high (or med-high if using stove) for approx 5 hours, or until liquid is mostly absorbed and beans and lentils are very soft (or to your liking). Taste and season with salt and pepper as desired. Feel free to add your favorite spices...afterall, this is your creation!
