Just made some of these this morning and they're flying off the plate! The base recipe is from Taste Of Home magazine, but I've made some alterations/additions to make them extra special.
1/2 C. unsalted butter
3/4 C. granulated sugar
2/3 C. packed brown sugar
2 extra-large egg whites
1 C. smooth peanut butter
1 1/2 t. vanilla extract
1 C. self-rising flour
2 regular-sized Butterfinger candybars (not the jumbo ones), chopped coarsely
1 C. honey-roasted peanuts, chopped coarsely
Preheat oven to 350 degrees (F). In large bowl, cream together the first 6 ingredients. Add flour and blend well, then add in the candybars and peanuts.
Drop by generous, rounded teaspoons (or use a cookie-dough scoop....which looks like a tiny ice cream scoop) onto baking sheets and bake for approx. 10-12 minutes. Your oven may have its own interpretation of 350 F., so watch these during the last couple minutes.
